Why Masala Loses Its Aroma | Common Spice Storage Mistakes to Avoid

 


Indian spices mainly lose their aroma because of heat, light, moisture and air. These factors damage the natural volatile oils responsible for the fragrance and flavour of spices such as cumin, coriander, red chilli and garam masala.

One common mistake is keeping the everyday masala dabba near the stove, where constant heat accelerates flavour loss. Transparent jars exposed to sunlight can also weaken colour and aroma. Using a damp spoon introduces moisture, while large, half-empty packets allow excess air to speed up oxidation.

Whole spices generally retain their quality much longer than ground spices. For example, whole cumin seeds, whole coriander seeds, cloves, cardamom and whole black pepper can stay aromatic for years when stored correctly. Whole garam masala is also a practical choice for preserving freshness.

For better storage, keep spices in airtight containers away from heat and sunlight, label purchase dates and always use a dry spoon. Buying whole spices and grinding small batches when needed can further improve freshness.
