The combination of black pepper with haldi is familiar in many Indian kitchens. Turmeric provides earthy flavour and colour, while kali mirch adds warm aroma and rounded pungency.
Black pepper contains piperine, and turmeric contains curcumin. Research has examined how piperine may influence the absorption of curcumin. However, an ordinary pinch used in home cooking should not be compared with concentrated supplements or treated as medical therapy.
For everyday meals, add haldi during cooking and finish the dish with a small amount of freshly cracked pepper. This combination works well in dal, sabzi, soups, khichdi, gravies and warm milk prepared according to family traditions.
Avoid adding too much pepper because it can overpower the other spices and make the dish unpleasantly sharp. People with sensitive stomachs should keep the quantity moderate.
Store turmeric and pepper separately in dry, airtight containers. Grind whole peppercorns close to cooking time to preserve their natural aroma.
