Vrat Panjiri Recipe for a Festive Janmashtami

Looking for a vrat panjiri recipe without wheat flour? Dhaniya panjiri uses coriander seeds as its base and combines them with makhana, nuts, ghee and a sweetener. Many families prepare it during Janmashtami, but fasting ingredients vary across households and traditions.

Before making dhaniya panjiri for Janmashtami, check whether your family permits coriander, melon seeds, coconut and your chosen sweetener. Packaged icing sugar may contain starch, so read the ingredient list before adding it.

The method is simple: dry-roast coriander seeds until aromatic, then roast makhana and the other additions separately in ghee. Cool everything fully, grind to a coarse texture and combine with boora or powdered jaggery. A little cardamom adds fragrance without dominating the mixture.

Keep the panjiri dry by using a clean spoon and an airtight container away from kitchen steam. Jaggery is an optional sweetener; it does not make the dish sugar-free.
