The dough is the key to a good street style Club Kachori. It needs enough firmness to hold its shape in oil, while remaining pliable enough to roll without cracking.
Soak urad dal and grind it smoothly with a little ginger and green chilli. Mix maida, sooji, salt, ajwain, kalonji and hing, then rub in ghee or oil. Add the dal paste, curd and just enough lukewarm water to form the dough. Cover it and let it rest for at least 30 minutes so the sooji can absorb moisture.
Roll small portions into slightly thick discs without using dry flour. Fry in moderately hot oil, pressing gently to help each kachori puff. Drain on a rack or absorbent paper, and avoid covering them while they are hot.
