Homemade Mango Shrikhand (Amrakhand) – Festive Summer Sweet

If one dessert sums up the Indian summer, it is Mango Shrikhand — fondly called Amrakhand. This creamy sweet comes from the kitchens of Maharashtra and Gujarat and brings together ripe mangoes with silky hung curd.

Alphonso or Kesar mangoes give a deep golden color and natural sweetness, while thick hung curd creates that melt-in-the-mouth texture. A touch of saffron and cardamom rounds off the flavor. Hang the curd to drain the whey, blend the mangoes into a smooth puree, stir in sugar to taste, then fold everything together and chill for an hour or two.
